I love quinoa and I regularly use it as an alternative to rice.
I had curry quinoa with green pepper and pear stir-fry for dinner today and I knew I just had to share the recipe with you.
Quinoa counts as one of the worlds healthiest food options.
It is one of the most protein- rich foods we can eat and a wonderful gluten free addition to a healthy and balanced diet.
The year 2013 was actually called “The International Year of Quinoa” by
the UN, because of its high nutrient value and potential
to contribute to food security worldwide.
Here is what you need:
- 1 Cup of quinoa
- 1 Onion
- 1 Green pepper
- 1/2 Pear
- Chili powder
- Olive oil
- Sea salt
- Curry powder
- 1 Tsp. honey
- 2 Cups of Water
# Cook the quinoa with 2 cups of water for about 15 minutes.
# Meanwhile cut up your onion, pepper, and pear and stir-fry them with a bit of olive oil for about 5 minutes before you add the honey to the pan.
# Then add a pinch of sea salt and chili powder.
Once the quinoa is done cooking, season it with salt and curry powder, put everything on a plate, done!
