What can I say, it was a Thursday and I was craving cookies. Spontaneous as I am, I came up with a very simple cookie recipe that forced me to eat the whole tray of cookies in about half an hour.
The cookies are gone, but the recipe is right here:
- 11/2 cups of wholemeal spelt flour
- 1 cup of blanched almonds
- 1 1/2 tsp of honey
- 100g unsalted butter
- a pinch of salt
- a pinch of vanilla
First, mix all the ingredients in a bowl.
Knead the dough until it gets chewy
Form the dough into small equal sized balls and preheat the oven to 180° C ( 350° F)
Squeeze the dough down with your flat hand and use your fork for a pattern of your choice
Put them in the oven and bake for 10 minutes
After 10 minutes, take them out and let them cool for about an hour.
