Vanilla Almond Butter Cookies

What can I say, it was a Thursday
and I was craving cookies. Spontaneous as I am, I came up with a very
simple cookie recipe that forced me to eat the whole tray of cookies in
about half an hour.

The cookies are gone, but the recipe is right here:

11/2 cups of wholemeal spelt flour

1 cup of blanched almonds

1 1/2 tsp of honey

100g unsalted butter

a pinch of salt

a pinch of vanilla

First, mix all the ingredients in a bowl.

Knead the dough until it gets chewy

 Form the dough into small  equal sized balls and preheat the oven to 180° C ( 350° F)


  Squeeze the dough down with your flat hand and use your fork for a pattern of your choice

Put them in the oven and bake for 10 minutes

After 10 minutes, take them out and let them cool for about an hour.

 I have to say, the cookies turned out perfectly!

 The perfect crunch and yet gooey on the inside.

    Hallo, Florine!

    Die Kekse sehen großartig aus! Ich wollte mir das Rezept aufschreiben, aber da scheint irgendetwas zu fehlen, denn auf den Fotos sehe ich Butterstückchen, die in der Liste nicht vorkommen.

    Ich würde mich sehr über das ganze Rezept(und somit die leckeren Kekse!) freuen~

      Hi Natalie, vielen, vielen Dank für dein Kommentar! Ich hatte gar nicht bemerkt, dass ich die Butter vergessen habe. Habs nachgetragen, jetzt ist das Rezept vollständig. Viel Spaß beim Backen ☀️
