What can I say, it was a Thursday
and I was craving cookies. Spontaneous as I am, I came up with a very
simple cookie recipe that forced me to eat the whole tray of cookies in
about half an hour.
11/2 cups of wholemeal spelt flour
1 cup of blanched almonds
1 1/2 tsp of honey
100g unsalted butter
a pinch of salt
a pinch of vanilla
First, mix all the ingredients in a bowl.
Knead the dough until it gets chewy
Form the dough into small equal sized balls and preheat the oven to 180° C ( 350° F)
Squeeze the dough down with your flat hand and use your fork for a pattern of your choice
Put them in the oven and bake for 10 minutes
After 10 minutes, take them out and let them cool for about an hour.

I have to say, the cookies turned out perfectly!
The perfect crunch and yet gooey on the inside.
