Roasted caramelised veggies on hummus

Fast, healthy, delicious.

This is the perfect recipe for a quick lunch that you can either enjoy at home or bring with you to school, uni or work.

Here is what you need

  • Different varieties of lettuce
  • Hot mustard- may I suggest the medium mustard by Zwergenwiese it’s my favorite and it makes everything taste a little better.
  • Honey
  • Homemade hummus
  • Mushrooms
  • Dried tomatoes
  • Coconut oil
  • 1/2 Melanzane
  • Pumpkin seed oil
  • Himalayan sea salt
  • Vinegar – I always use the San Vicario vinegar, it’s the best there is ….trust me!

  Stir fry

# Stir fry mushrooms, melanzane and dried tomatoes with a bit of coconut oil and salt for about 5 minutes.

# Add a bit of honey and let the veggies caramelise for about 1 minute.

Dressing

# Mix a teaspoon of honey with 1 teaspoon of mustard, 2 teaspoons of vinegar and 2 teaspoons of pumpkin seed oil.

# Season with himalayan sea salt and a bit of chili, done!
